Kohlrabi With Creamy Coleslaw Dress
Ingredients
2 garlic cloves, minced .
3 tbsps cilantro, sliced .
1 cucumber, seeded & sliced in thin 1/2 moons .
4 c cabbage, shredded .
1 tsp curry powder .
1/3 c rice vinegar .
1 serrano pepper or jalapeno chile, seeded & inced .
1 tbsp sugar .
1/3 c salad oil .
1 c dry roasted peanuts, coarsely sliced .
4 green onions or scallions, sliced thin
Directions
Step #1 Toss cabbage, green onions & cucumber together in large non-reactive bowl.
Step #2 Keep chilled while preparing dressing.
Step #3 Combine chili, sugar, curry powder, garlic, oil & vinegar in covered container.
Step #4 Whisk or shake to mix.
Step #5 Just before serving add peanuts & cilantro to the cabbage, pour dressing over all, toss lightly to mix.
Step #6 Salad does not keep well for very long, so do not dress until just prior to serving.
Step #7 It doesn't actually go bad, but the peanuts & cabbage soften & it's just not as good as fresh made.
Step #8 If taking to a pot luck or similar affair, I bring the dressing in a separate container to add at the last min.
