Sweet Potato Mochi Recipe

Ingredients
  • toasted soy flour (Kinako) .
  • 1/8 tsp salt .
  • 1 1/4 c water .
  • 1 1/4 c brown sugar .
  • 1 tsp baking soda .
  • 1 (13 1/2 oz) can coconut milk .
  • 1 lb mochiko sweet rice flour .
  • 2 c sweet potatoes, cooked & sliced .
  • 1 tbsp black sesame seeds

Directions
  • Step #1 Preheat electric oven to 350°F Grease a 13 x 9 x 2-inch baking pan.
  • Step #2 In a large bowl, baking soda, sift mochiko, & salt; add brown sugar & mix well.
  • Step #3 Add coconut milk & water; mix well.
  • Step #4 Fold in sweet potatoes; pour this into prepared pan.
  • Step #5 Sprinkle top with sesame seed.
  • Step #6 Bake for 1 hr.
  • Step #7 Cool, cut into 2 x 1-inch pieces.
  • Step #8 Coat each piece with Kinako (yellow soy bean powder).
