Welsh Lamb Steaks With Redcurrant Glaze Recipe

Ingredients
  • 14 fluid oz red wine .
  • 1 pinch fresh ground black pepper .
  • 1 lb lamb steaks (Chump) .
  • 1 pinch salt .
  • 3 sprigs fresh rosemary .
  • 2 tbsps olive oil .
  • 2 garlic cloves, peeled & crushed .
  • 4 tbsps red currant & port jelly (Waitrose makes this but sub regular currant jelly if you can't find it.) .
  • 2 tsps fresh lemon juice

Directions
  • Step #1 Heat the olive oil in an ovenproof frying pan & brown the lamb on both sides for 2-3 mins.
  • Step #2 Add the garlic & rosemary, 425F F, season & place this in a preheated oven 220 C, gas mark 7 for 10 mins.
  • Step #3 Remove the lamb from the oven & turn the heat off.
  • Step #4 Wrap the lamb loosely in foil wrap & return it to the oven for a further 10 mins.
  • Step #5 Drain off any excess fat from the pan.
  • Step #6 Stir in the red wine & redcurrant jelly.
  • Step #7 Bring to the boil & let simmer for 10-15 mins or until syrupy & reduced by half.
  • Step #8 Add the lemon juice & season if required.
  • Step #9 To serve, carrots, spoon the glaze over the lamb & serve this with a selection of steamed baby summer vegetables such as courgettes, sweetcorn & peppers.
