Ingredients
1/2 lb wax beans, trimmed .
fresh ground black pepper .
1/2 lb green beans, trimmed .
1/4 c extra-virgin olive oil .
2 c plain low-fat yogurt .
2 large oranges, juice & zest of .
2 tbsps grated fresh ginger .
Bean Salad .
Turkey .
1/4 c packed fresh mint leaves, sliced .
sea salt .
3 large ripe tomatoes, cut into 1/2-in . thick slices .
1/2 tsp salt .
1/4 c balsamic vinegar .
2 lbs turkey cutlets, 1/2-in . thick .
1/4 tsp fresh ground pepper
Directions
Step #1 1.
Step #2 To make turkey: Place cutlets between double sheets of plastic wrap.
Step #3 Using a meat mallet or rolling pin, lb cutlets to ¼- inches thickness.
Step #4 Spice up with salt & pepper.

Step #6 In a small bowl, ginger, mix orange zest with juice, yogurt, & mint; stir until mixed.
Step #7 Pour yogurt mixture into a large resealable bag plastic bag; add turkey cutlets & turn to coat thoroughly.
Step #8 Refrigerate 2 hrs.

Step #10 Heat a large panini griddle or Foreman grill to high (with drip tray in place).
Step #11 Remove cutlets from marinade; allow excess yogurt to drip off.
Step #12 In batches, place cutlets on grill, & cook this until cooked through, cover, about 2 mins.
Step #13 Keep warm in oven.

Step #15 To make bean salad: Heat a panini griddle or Foreman grill.
Step #16 In batches, arrange beans in a single layer on griddle.
Step #17 Cover up & cook this until just tender, 4-5 mins.
Step #18 Sprinkle top with salt & pepper to taste, & set aside.

Step #20 Sprinkle top tomato slices with salt & pepper to taste; grill until just heated through, about 1 mins.
Step #21 6.
Step #22 In a small bowl, whisk vinegar & oil until mixed.
Step #23 On each of 6 plates, layer tomato slices & beans, drizzling each layer with vinaigrette.
Step #24 Top with turkey cutlets.
