Chiang Mai Noodles Recipe

Ingredients
  • 500 g fresh egg noodles .
  • 1/4 c cilantro, sliced .
  • 1 tbsp peanut oil .
  • 3 shallots, sliced .
  • 1-2 tbsp red curry paste .
  • 2 tsps brown sugar .
  • 350 g lean pork, thinly sliced .
  • 2 tbsps fish sauce .
  • 3 spring onions, finely sliced .
  • 6 garlic cloves, crushed .
  • 1 carrot, cut into thin strips .
  • 2 tsps red chili, finely sliced

Directions
  • Step #1 Cook noodles in wok of rapidly boiling water for 2-3 mins or until just tender.
  • Step #2 Drain & keep warm.
  • Step #3 Heat oil in wok til very hot, add shallots, garlic, chilli & curry paste & stir fry for 2 mins or until fragrant.
  • Step #4 Add pork in two batches & cook for 3 mins or until meat changes colour.
  • Step #5 Return all meat to work, add carrot, fish sauce, brown sugar & bring to the boil; add noodles & spring onions, toss well.
  • Step #6 Top with cilantro & serve as soon as possible.
