Salmon With Fresh Pineapple Salsa Recipe

Ingredients
  • 1 tbsp honey .
  • 1/2 c red bell peppers, sliced .
  • 1/4 c red onions, sliced .
  • 1 c coarsely sliced fresh pineapple .
  • 1/4 tsp ground cumin .
  • 1/2-1 tsp garlic salt .
  • 3/4 lb salmon fillets .
  • 4 tbsps lime juice, divided .
  • 1 tbsp cilantro, minced .
  • 2 small jalapeno peppers, finely minced .
  • 1/4 tsp hot sauce (I like Cholula)

Directions
  • Step #1 For salsa, garlic salt, onion, cilantro, honey, in a medium bowl, jalapenos, pepper, 3 T lime juice, mix pineapple, & hot sauce.
  • Step #2 Cover up & put in the fridge for 2 hrs.
  • Step #3 Preheat oven to 450°.
  • Step #4 Place salmon, skin side down, sprinkle with cumin, on a piece of foil wrap, then put foil wrap on a rimmed cookie sheet.
  • Step #5 Bake for 10 - 15 mins, depending on the thickness of the salmon.
  • Step #6 Remove salmon from the skin (This is easy - the skin just sticks to the foil wrap!) & serve topped with salsa.
