Vegetable Soup A La Jen Recipe

Ingredients
  • 3/4 tsp paprika .
  • 1 tbsp dried parsley flakes .
  • 1 tsp black pepper .
  • 1 tsp dried basil .
  • 1-2 tsp salt .
  • 1 c lettuce or cabbage, sliced .
  • 4 carrots, peeled & sliced 1/4 inch thin .
  • 2-3 tbsps olive oil .
  • 1-2 tsp curry powder .
  • 1 (14 1/2 oz) can tomatoes, undrained .
  • 6-8 c chicken broth or stock, fat removed .
  • 1/2 c white wine (optional) .
  • 1 medium onion, sliced .
  • 1 green bell pepper or red bell pepper, seeded & sliced .
  • 3/4 tsp cayenne pepper .
  • 6 garlic cloves, peeled & sliced .
  • 2 stalks celery, sliced (reserve the leaves) .
  • 1 tsp dried thyme

Directions
  • Step #1 Heat the oil In a large-ish stockpot or Dutch oven.
  • Step #2 Add the onion, carrots & garlic & cook,bell pepper, until almost tender, covered, celery, stirring frequently to prevent burning.
  • Step #3 Add lettuce or cabbage & sweat (cover the pan) for about 2 mins.
  • Step #4 Add tomatoes & cook for about 5 mins, covered.
  • Step #5 Add chicken broth or stock, herbs & spices, & bring the soup to a boil.
  • Step #6 Reduce the heat, then simmer for about 1 to 1 1/4 hr, until carrots & celery are very tender.
  • Step #7 Adjust seasoning if necessary.
  • Step #8 Add wine if desired.
  • Step #9 Remove from heat.
  • Step #10 Serve with cornbread or corn muffins.
  • Step #11 This soup freezes very well.
  • Step #12 Chill thoroughly before freezing.
