Potato Leek Soup (vegetarian) Recipe

Ingredients
  • 3-4 c water (less water means creamier) .
  • 1/2 tsp pepper .
  • 1/4 c grated parmesan cheese or romano cheese .
  • 3 potatoes, peeled & cut into 1 in. cubes .
  • 1 bay leaf .
  • 3 sprigs fresh thyme .
  • 2 tsps salt .
  • 1 1/2 c cream (I use 40% heavy cream) .
  • 3-4 thick leeks, white & light green parts, cleaned & sliced thin

Directions
  • Step #1 Place potatoes, thyme, salt, water, bay, leeks, & pepper into medium saucepan.
  • Step #2 Bring to simmer.
  • Step #3 Cook uncovered over medium-low heat for 20-30 mins, or until potatoes can be easily smashed against the side of a pot with a spoon.
  • Step #4 Remove pan from the heat.
  • Step #5 Discard thyme stems & bay leaf.
  • Step #6 Place 3/4 of soup into mixer & puree, being careful to allow steam to escape.
  • Step #7 Return contents of mixer to the pan & stir in the cream.
  • Step #8 Once cream is incorporated, add cheese & stir til melted.
  • Step #9 If desired, heat soup for 1-5 mins more over med-heat/flame.
