Ingredients
1/2 c melted butter or margarine .
2 (3 oz) packages lemon gelatin, that's the 4 serving size that's the 4 serving size or jello orange flavor gelatin, that's the 4 serving size .
2 (8 oz) packages cream cheese, softened .
2 c sugar (can use more for a sweeter taste) .
2 c boiling water .
1/4 c sugar (or to taste) .
1 c whipped cream or cool whip frozen whipped topping, thawed (can use 2 c for more creamy taste) .
2 c graham cracker crumbs .
1/2 tsp cinnamon
Directions
Step #1 Set oven to 350 degrees (just to bake the crust).
Step #2 Prepare a 13 x 9-inch baking pan.
Step #3 In a medium bowl mix together graham cracker crumbs, melted butter, sugar & press into bottom of prepared baking pan.
Step #4 Bake for 7 mins (no more than 7 mins!) remove & cool completely.
Step #5 For the cream cheese filling: dissolve the gelatin powder in the boiling water, & place this in the refigerator.
Step #6 Let cool until thick but not set (about 1 hr & 15 mins, it might take a little more or less time).
Step #7 In a large bowl beat the softened cream cheese with the 2 c sugar until fluffy & smooth (about 3-4 mins).
Step #8 To the whipped cream or Cool Whip, fold in the chilled lemon or orange gelatin; mix until well mixd.
Step #9 Then add in the cream cheese mixture; mix to mix.
Step #10 Pour the filling into prepared crust.
Step #11 Chill in the refrigerator for a minumum of 8 hrs or more.
Step #12 Cut into squares & serve this with a dollup of whipped cream on top if desired.
