Penne With Capsicum And Slow Roasted Vegetables Recipe

Ingredients
  • 2 red capsicums, grilled skinned cut into segments .
  • 4 tbsps extra virgin olive oil .
  • 2 tbsps fresh basil, sliced .
  • 4 zucchini, cut into 1cm cubes .
  • 400F g butternut pumpkin, cut into 1cm cubes .
  • 4 roma tomatoes, cut into 1cm cubes .
  • 6 garlic cloves, unpeeled .
  • salt & pepper .
  • 1 yellow capsicum, grilled skinned cut into segments .
  • 500 g penne pasta

Directions
  • Step #1 Preheat oven to 180 degrees Celsius.
  • Step #2 Lightly brush zucchini & pumpkin with little oil.
  • Step #3 Roast garlic, pumkin, tomatoes & zucchini until pumpkin & zuccini are golden.
  • Step #4 Remove garlic & allow this to cool.
  • Step #5 Add capsicum to baking tray & season.
  • Step #6 Continue to heat.
  • Step #7 Meanwhile cook pasta until al dente.
  • Step #8 Cut of tops of garlic cloves & push cooked garlic into serving bowl.
  • Step #9 Mix with olive oil & basil.
  • Step #10 Toss penne with vegetables in the prepared oil.
