Ingredients
4 garlic cloves, coarsely sliced .
1 lemon, quartered, to be used for garnish .
2 lbs large shrimp (raw) .
1 tsp birds eye chiles, minced (can use serrano, Thai, or other hot chile to your taste) .
salt .
2 tbsps lemon juice, freshly squeezed .
pepper .
2/3 c peanut oil
Directions
Step #1 Shell, devein & wash shrimp, leaving tails intact.
Step #2 Dry thoroughly on paper towels.
Step #3 In a small bowl, lemon juice, salt & pepper to taste, garlic, mix the chile, & the peanut oil.
Step #4 Place shrimp In a large-ish bowl, & pour the oil mixture over the shrimp, coating the shrimp well.
Step #5 Cover up bowl, & place this in the refrigerator at least three hrs, & stir every once in awhile.
Step #6 Preheat the broiler (or grill).
Step #7 Remove the shrimp from the marinade & place this in a single layer on a tray under the broiler, or in a grill basket for the grill.
Step #8 Cook about 2 mins per side, until the shrimp are pink.
Step #9 Serve with hot rice & garnish with a lemon quarter.
