Caramelized Grilled Pork Recipe

Ingredients
  • 1 tbsp lime juice .
  • 1 tbsp asian fish sauce .
  • 6 boneless pork chops (1/4 inch thick) .
  • 1/2 tsp salt .
  • 1/4 c shallots, sliced .
  • 1/2 c sugar

Directions
  • Step #1 Pound chops between 2 sheets of plastic wrap or wax paper with a meat lber (flat side) or rolling pin until meat is 1/8 inch thick.
  • Step #2 Make several small slits around edge of each chop.
  • Step #3 Half each chop lengthwise & transfer to bowl.
  • Step #4 In a saucepan cook sugar over med-heat/flame until it begins to melt, continue cooking stirring until sugar is melted into a golden caramel.
  • Step #5 Add shallots, lime juice, fish sauce & salt & cook 2 mins longer or until caramel is dissolved & shallots are softened.
  • Step #6 Heat a grill pan over med-heat/flame until hot.
  • Step #7 Grill pork in batches, turning once until cooked through (1-3 mins per side).
  • Step #8 Discard any remaining caramel sauce.
