Ingredients
1/2 c brown rice .
1 tbsp sugar .
1 c cheese (any kind) .
2 c stock .
1 (540 g) can lentils .
1/2 tsp cinnamon .
1 (540 g) can crushed tomatoes .
1 1/2 tsps basil
Directions
Step #1 Combine (drained) lentils, basil, tomatoes, stock, rice, cinnamon & sugar in microwave-safe casserole dish.
Step #2 Cover up & microwave on HIGH (100%) 8-10 mins.
Step #3 Continue cooking on MED (50%) 40-45 mins until rice is tender & fluffy.
Step #4 Let stand covered for 5 mins, sprinkle with your choice of cheese.
