Maple Scalloped Sweet Potatoes With Sage Recipe

Ingredients
  • 1/2 c dry breadcrumbs .
  • 1 tbsp minced fresh parsley .
  • 1/2 c real maple syrup .
  • 1/4 tsp black pepper .
  • 1 1/2 tsps finely sliced fresh sage leaves .
  • 3 c cream .
  • TOPPING .
  • 1/4 tsp ground nutmeg .
  • 2 tsps minced fresh thyme .
  • 1 1/2 tsps salt .
  • 3 tbsps freshly grated parmesan cheese .
  • 2 tsps finely sliced fresh sage leaves .
  • 2 tsps minced fresh thyme .
  • peeled & thinly sliced sweet potatoes .
  • MAPLE CREAM

Directions
  • Step #1 Preheat the oven to 350*F.
  • Step #2 Spray a 3 quart baking dish with nonstick vegetable spray or lightly butter it.
  • Step #3 Arrange the sliced sweet potatoes in the dish in an even layer.
  • Step #4 In a large bowl, whisk together the Maple Cream ingredients until well mixd.
  • Step #5 Pour the mixture over the sweet potatoes, & push them down a bit to be sure they are coated in liquid.
  • Step #6 In a small bowl, mix the Topping ingredients & set aside.
  • Step #7 Bake the potatoes for 35 mins, & then sprinkle them with the topping.
  • Step #8 Bake for another 25 to 35 mins, or until the topping is browned, the potatoes are tender, & the liquid is thickened.
  • Step #9 Garnish with a sprinkle of fresh sage leaves if desired.
