Danish Blue Cheese Salad Recipe

Ingredients
  • 1 pinch pepper .
  • 1 pinch salt .
  • 1/2 c cucumbers, sliced paper-thin (about 2-inch section of cucumber) .
  • 4 tbsps vegetable oil .
  • 1 pinch sugar .
  • 1/4 lb danish blue cheese, crumbled .
  • 1 sweet onion, thinly sliced .
  • 1 bunch radishes, cleaned & thinly sliced (small baby sized radishes) .
  • 1 pinch dry mustard .
  • 2 tbsps white wine vinegar .
  • 1 quart lettuce leaves (small new tender garden lettuce, or butter lettuce)

Directions
  • Step #1 Wash & dry the lettuce & place this in a serving bowl.
  • Step #2 Add radishes, cucumber, & onion.
  • Step #3 Sprinkle top with the blue cheese.
  • Step #4 In a small bowl, mix together the salt, sugar, mustard, pepper, & vinegar.
  • Step #5 Whisk in the salad oil.
  • Step #6 Just before serving, stir the dressing again, & pour over the salad.
