My Take Carrot (zrodia) Slata Recipe

Ingredients
  • 2 tbsps lemon juice .
  • 1/4 tsp fresh ground black pepper .
  • 2 tbsps sliced fresh coriander .
  • 1 garlic clove, finely minced .
  • salt .
  • 1 lb carrots, shredded .
  • 1 tsp ground cumin .
  • 1 tbsp vegetable oil .
  • 1/4 c sliced fresh flat leaf parsley .
  • 1/4 tsp ground ginger .
  • 1/2 tsp paprika .
  • 1 tbsp tomato paste

Directions
  • Step #1 Combine the parsley coriander, & garlic until finely minced.
  • Step #2 Add the lemon juice, oil, tomato paste, & seasonings.
  • Step #3 Combine just until all the ingredients are well mixed.
  • Step #4 This is to be your dressing.
  • Step #5 Place the mixture In a large-ish - or ceramic bowl, top this with the carrots, & toss until the carrots are coated.
  • Step #6 Cover up the bowl & put in the fridge for 4 to 6 hrs or overnight.
  • Step #7 Adjust the seasonings; salt, pepper & lemon & serve chilled or at about room temp.
  • Step #8 The cooking time is the chilling time at a minumum.
