Coffee Liqueur Raisin Cookies Recipe

Ingredients
  • 2 c packed brown sugar
  • 1/2 tsp salt
  • 3 eggs
  • 1 c white chocolate chips (optional)
  • 1 tsp baking soda
  • 2 1/2 c rolled oats
  • 1 tsp baking powder
  • 1 c sliced walnuts (optional)
  • 1 c shortening
  • 1/2 c milk
  • 1 1/2 c raisins
  • 3 c all-purpose flour
  • 1/2 c coffee flavored liqueur

Directions
  • Step #1 Place raisins in a small bowl, & add coffee flavored liqueur.
  • Step #2 Heat in the microwave for approximately 2 mins, or until hot.
  • Step #3 Set aside to cool (overnight is great).
  • Step #4 Drain, & reserve liquid.
  • Step #5 Preheat oven to 350 degrees F (175 degrees C).
  • Step #6 Grease cookie sheets.
  • Step #7 In a large bowl, cream together shortening & brown sugar.
  • Step #8 Beat in eggs, one at a time, then mix in milk & the reserved liquid from the raisins.
  • Step #9 Combine flour, baking soda, baking powder, & salt; stir in theto the creamed mixture.
  • Step #10 Stir in oats.
  • Step #11 Mix in the walnuts & white chocolate chips, if desired.
  • Step #12 Drop by rounded spoonfuls onto prepared cookie sheets.
  • Step #13 Bake for 8 to 10 mins in the preheated oven.
  • Step #14 Allow cookies to cool on baking sheet for 5 mins before transferring to a wire rack to cool completely.
