Chicken And Bacon Fajitas Recipe

Ingredients
  • 3 slices peppered bacon, sliced
  • 1 c cherry tomatoes, cut in half
  • 3/4 c sliced cilantro
  • 1 1/2 c sliced mushrooms
  • 8 large flour tortillas (burrito size), warmed to soften
  • 1 sliced red bell pepper
  • 1 sliced green bell pepper
  • 1/2 c sliced onion
  • 3 boneless, skinless chicken breast halves
  • salt to taste

Directions
  • Step #1 Heat a large skillet over medium-high heat.
  • Step #2 Cook the chicken breasts until the outside is golden brown, & the juices run clear.
  • Step #3 Salt the breasts to taste, then set aside.
  • Step #4 Cook the bacon in the hot skillet until it begins to release some oil.
  • Step #5 Stir in the onion, & bell peppers; cook this until the bacon is crispy & the onions are transluscent.
  • Step #6 Stir in the tomatoes & mushrooms, & continue cooking until the mushrooms have softened.
  • Step #7 Slice the cooked chicken breasts into bite-sized pieces, then add to the skillet along with the cilantro.
  • Step #8 Stir to mix, & cook for a min to reheat.
  • Step #9 Spoon into warmed tortillas to serve.
