Polenta Fingers With Beans And Tomatoes Recipe

Ingredients
  • 1 1/2 c polenta (10 oz) .
  • 1 onion, sliced .
  • SAUCE .
  • 2 tbsps olive oil .
  • 7 1/2 c milk, & water, mixed (3 pints) .
  • 2 oz parmesan cheese, freshly grated .
  • 2 garlic cloves, crushed .
  • 1 pinch dried sage .
  • 2 tsps salt .
  • ground black pepper .
  • salt & fresh ground pepper .
  • grated nutmeg, to taste .
  • 2 tbsps butter, plus extra for spreading .
  • 1 (14 oz) can sliced tomatoes .
  • 8 oz frozen broad beans

Directions
  • Step #1 In a large saucepan, bring the milk/water mixture to a boil; using a wooden spoon, stir the salt & polenta into the boiling liquid in a steady stream, stirring constantly until the mixture has thickened.
  • Step #2 Lower the heat & let simmer for about 20 mins, stirring frequently; add the butter, cheese & seasoning.
  • Step #3 Lightly grease a shallow roasting pan & pour in the polenta mixture; cool, then chill overnight.
  • Step #4 To make the sauce, seasoning & sage; cook for 10 mins, then add the tomatoes, fry the onion & garlic in oil for 5 mins, stir in the the broad beans & cook for another 5 mins.
  • Step #5 Turn out the polenta & cut into fingers; grill both sides until brown & crisp; spread with a little butter & serve this with the tomato beany sauce.
