Langley Blackberry Muffins Recipe

Ingredients
  • 1 1/2 tsps baking powder .
  • 1 c granulated sugar .
  • 1 1/2 c all-purpose flour .
  • 1 1/3 c buttermilk .
  • 1/2 tsp baking soda .
  • 1/2 tsp salt .
  • 1/2 tsp almond extract .
  • 1 c large flake rolled oats .
  • 1/4 c melted butter .
  • 1 large egg, beaten .
  • 1 c frozen blackberries (I fill up the glass measuring c to brim full)

Directions
  • Step #1 Soak oats in buttermilk for 10 mins.
  • Step #2 Grease 12 muffin c.
  • Step #3 Preheat oven to 375°.
  • Step #4 Measure flour, baking powder, baking soda, salt & sugar into large bowl making well in centre.
  • Step #5 Whisk egg, then stir in the butter & extract.
  • Step #6 Combine egg mixture with oat mixture before adding into flour mixture.
  • Step #7 Mix carefully until almost mixd.
  • Step #8 Add frozen berries to batter.
  • Step #9 Do not over mix.
  • Step #10 Bake for 25-30 mins until cake tester comes out clean.
  • Step #11 Remove pan from oven & let it sit for about 5 mins before inverting the muffins onto a cake rack.
