Ingredients
  • 5 fluid oz double cream .
  • 4 oz unsalted butter .
  • 1 tbsp cold water .
  • 3 eggs .
  • 6 oz plain flour .
  • 4 oz caster sugar .
  • 1 1/2 oz icing sugar .
  • 2 lemons

Directions
  • Step #1 Preheat oven to 190 Degrees Centigrade, Gas Mark 5.
  • Step #2 Melt the butter carefully & mix together with the flour, icing sugar & water.
  • Step #3 Press the soft dough into the base & up the sides of a fluted flan ring.
  • Step #4 Pierce the base several times & bake blind on a baking tray in the oven for 20 mins until golden.
  • Step #5 Reduce the oven temperature to 150 Degrees Centigrade, Gas Mark 2.
  • Step #6 Grate the rind of the lemon & then juice.
  • Step #7 Place caster sugar, cream, eggs, in a bowl with the lemon rind & juice.
  • Step #8 Whisk together until mixed, then carefully pour this into the cooked pastry case.
  • Step #9 Return to the oven & cook for a further 35-40 mins until set.
