Chile Jam Recipe

Ingredients
  • 1/2 c red wine vinegar
  • 1 green apple, finely grated
  • 2 ripe tomatoes
  • 1 small onion, finely sliced
  • 1/2 c white sugar
  • 12 jalapeno peppers, seeded & halved

Directions
  • Step #1 Preheat oven to Broil.
  • Step #2 Lay the peppers, cut side down, on a baking sheet & place under the broiler until skin turns black.
  • Step #3 Remove from the oven & cover with a kitchen towel; allow this to cool.
  • Step #4 Cut a small X in the base of the tomatoes.
  • Step #5 Place in a small bowl, cover with boiling water, & set aside for 2 mins.
  • Step #6 Drain & cool.
  • Step #7 Peel skin from peppers & tomatoes; chop flesh finely.
  • Step #8 In a medium saucepan mix onion, apple, vinegar & sugar with tomatoes & peppers.
  • Step #9 Heat over med-heat/flame, stirring until sugar has dissolved; bring to a boil.
  • Step #10 Reduce heat to low & let simmer for 30 mins.
  • Step #11 Store, covered, in the refrigerator for up to 1 month.
