Chinese Roasted Chicken Recipe

Ingredients
  • 1 tsp vegetable oil
  • 1 (4 lb) fresh or thawed whole roasting chicken
  • 1 large clove garlic, pressed
  • 1/4 tsp sugar
  • 2 tsps dry sherry
  • 1/2 tsp fennel seed, crushed
  • 1/2 tsp ground ginger
  • 2 tbsps Kikkoman Lite Soy Sauce
  • 1/8 tsp ground cloves

Directions
  • Step #1 Remove & discard giblets & neck from chicken.
  • Step #2 Rinse chicken under cold running water; drain well & pat dry with paper towels.
  • Step #3 Pierce chicken thoroughly with fork.
  • Step #4 Place chicken, in shallow, breast side up, foil-lined roasting pan.
  • Step #5 Combine lite soy sauce, garlic, oil, sherry, fennel, ginger, sugar & cloves.
  • Step #6 Brush cavity & skin thoroughly with sauce mixture.
  • Step #7 Roast in 325F degrees F.
  • Step #8 oven 1 hr & 45 mins, or until meat thermometer inserted into thigh registers 180, brushing chicken every once in awhile with remaining sauce mixture during last 40 mins of roasting time.
  • Step #9 Remove chicken from oven & let this stand 10 mins before carving.
