Turkey Shepherd's Pie With Two-potato Topping (or Chicken) Recipe

Ingredients
  • 4 c turkey meat or chickens, sliced (raw or cooked) .
  • 1 medium celery rib, finely sliced .
  • 2 c mashed potatoes .
  • 1 tbsp butter, melted .
  • 1 garlic clove, minced .
  • 2 tbsps chives, minced .
  • 2 tbsps unsalted butter .
  • fresh ground pepper .
  • 1 medium onion, finely sliced .
  • 1 medium carrot, finely sliced .
  • 1 c mashed sweet potatoes .
  • 2 tbsps orange juice .
  • 2 tsps sage, finely sliced .
  • 1 c turkey gravy or chicken gravy .
  • 1 large egg, beaten .
  • 1 tbsp flat leaf parsley, sliced .
  • salt

Directions
  • Step #1 Melt 2 tbsps of butter In a large-ish skillet & add onion, celery, carrot & garlic.
  • Step #2 Cook over low heat/flame until softened, about 12 mins.
  • Step #3 Stir in turkey or chicken & cook this until heated through.
  • Step #4 Add the gravy & orange juice to the mixture & cook this until bubbling.
  • Step #5 Remove from the heat, stir in the the parsley & sage & season this with salt & pepper.
  • Step #6 Transfer the filling to a round, oval or 9-by-12-inch baking dish & let cool.
  • Step #7 Preheat the oven to 400°.
  • Step #8 In a bowl, mix both potatoes together & add chives.
  • Step #9 Spice up with salt & pepper & beat in the egg.
  • Step #10 Spread the potatoes over the filling & brush the top this with the melted butter.
  • Step #11 Bake in the upper third of the oven for about 30 mins, or until the topping is lightly browned & the filling is bubbling.
  • Step #12 Let the pie stand for about 10 mins before serving.
