Step #1 To caramelize the onions, heat the olive oil in a heavy skillet, add onions, garlic & herbs.
Step #2 Cook over low heat/flame for 45 mins or until onions are soft & most of the moisture has evaporated.
Step #3 Discard the bay leaf; add salt & pepper to taste.
Step #4 To roast the bell peppers, core, cut in half & place on broiler pan skin side up; preheat broiler to high & place peppers under broiler for 10 to 15 mins or until skin blackens.
Step #5 With a pair of tongs, place the cooked peppers in a paper bag, fold top closed, & cool for 10 mins.
Step #6 When cool enough to handle remove skin & slice into thin strips.
Step #7 To roast the eggplant & tomatoes, preheat your trusty oven to 400F degrees.
Step #8 Spray an ovenproof pan with non-stick cooking spray; add the eggplant, place this in oven & cook for 30 mins, basil, tomatoes, capers & drizzle with olive oil, stirring once or twice.
Step #9 When eggplant is cooked, add pepper to taste.
Step #10 For the toppings, finely mince the fresh herbs or crush the dried herbs; add the herbs to 3 tbsps olive oil & warm until herbs are fragrant.
Step #11 Set aside while preparing crust.
Step #12 In a small bowl, sprinkle the yeast & sugar over 1 c warm water; stir this to mix.
Step #13 Allow to stand for 5 mins or until bubbly.
Step #14 In a medium size bowl, mix the flours & measure 1 1/2 c; set aside.
Step #15 Add the salt to the remaining 1 1/2 c flour; stir in the yeast & oil.
Step #16 Gradually add the reserved flour until dough is soft but not sticky.
Step #17 Knead until smooth; place this in a bowl that has been lightly oiled with olive oil.
Step #18 Allow to rise for 20 mins or until double in size.
Step #19 While assembling the pizza, preheat your trusty oven to 475 degrees; oil a large pizza pan (15 inch) with olive oil.
Step #20 Turn dough onto a lightly floured surface & knead for 8 to 10 times; roll this into desired size, stretch dough to sides of pan forming crust around the edges.
Step #21 Brush dough within 1/4 inch of crust with olive oil & herb mixture, top this with crumbled feta cheese, eggplant mixture, onions, bell peppers & olives.
Step #22 Sprinkle top parmesan cheese over all & lightly drizzle with 1 tbsp olive oil.
Step #23 Bake in preheated oven for 15 to 20 mins or until crust is lightly brown.
Step #24 Serve as soon as possible with extra parmesan cheese & red pepper flakes.
Step #25 Pleasse Note: Do not put hot toppings on pizza crust.
Step #26 Toppings should be at least room temperature.
