Salmon And Asparagus Tarts Recipe

Ingredients
  • 100 ml single cream .
  • salt & pepper .
  • 3 large eggs .
  • 375 g shortcrust pastry .
  • 100 g cooked salmon fillets, skinned .
  • 50 g asparagus spears

Directions
  • Step #1 Line 5 individual tart tins with pastry, prick with a fork & bake blind for 15 mins.
  • Step #2 Flake the fish.
  • Step #3 Microwave the asparagus for 3 1/2 mins, or poach in a little water for 5 mins, until tender.
  • Step #4 Cut into inch long pieces.
  • Step #5 Beat the eggs & cream together with the salt & pper.
  • Step #6 Divide the salmon & asparagus between the pastry cases & carefully pour in the egg mixture.
  • Step #7 Place in the oven & bake for a further 30 mins until the egg mixture is firm & slightly golden.
  • Step #8 If using the pre baked shell, bake for 35 - 40 mins or until firm in the middle.
