Ingredients
100 ml single cream .
salt & pepper .
3 large eggs .
375 g shortcrust pastry .
100 g cooked salmon fillets, skinned .
50 g asparagus spears
Directions
Step #1 Line 5 individual tart tins with pastry, prick with a fork & bake blind for 15 mins.
Step #2 Flake the fish.
Step #3 Microwave the asparagus for 3 1/2 mins, or poach in a little water for 5 mins, until tender.
Step #4 Cut into inch long pieces.
Step #5 Beat the eggs & cream together with the salt & pper.
Step #6 Divide the salmon & asparagus between the pastry cases & carefully pour in the egg mixture.
Step #7 Place in the oven & bake for a further 30 mins until the egg mixture is firm & slightly golden.
Step #8 If using the pre baked shell, bake for 35 - 40 mins or until firm in the middle.
