Crock Pot Yankee Pot Roast And Vegetables Recipe

Ingredients
  • 1/2 tsp dried thyme leaves .
  • pepper .
  • 1 tsp dried rosemary .
  • 3 medium baking potatoes, unpeeled & cut into quarters (about 1 lb) .
  • 1 large parsnip, cut into 3/4-inch slices .
  • salt .
  • 2 celery ribs, cut into 3/4-inch slices .
  • 2 large carrots, cut into 3/4-inch slices .
  • 2 bay leaves .
  • 1/2 c beef broth .
  • 2 1/2 lbs lean beef chuck roast, trimmed of fat & cut into serving-size pieces .
  • 1 onion, sliced

Directions
  • Step #1 Spice up roast with salt & pepper.
  • Step #2 Combine vegetables & seasonings in crock pot.
  • Step #3 Place beef over vegetables, & pour broth over beef.
  • Step #4 Cover up; cook on LOW until meat is fork-tender (8 1/2-9 hrs).
  • Step #5 Remove beef to serving platter, & arrange vegetables around beef.
  • Step #6 Remove & discard bay leaves.
  • Step #7 To make gravy, ladle the juices into a 2 c measuring c; let this stand 5 mins.
  • Step #8 Skim off & discard fat.
  • Step #9 Measure remaining juices & heat to a boil in small saucepan.
  • Step #10 For each c of juice, mix 2 tbsps of flour with 1/4 c of cold water until smooth.
  • Step #11 Stir mixture into boiling juices, stirring constantly until thickened (about 1 min).
