2 tbsps dry yeast (use 2 tbsps yeast, even 1-3/4 tbsp will do fine) .
4 c all-purpose flour (more as needed) .
3/4 c warm water .
1/4 c Crisco shortening, melted .
1 c full-fat milk .
1 tsp sugar .
3-4 tbsps sugar (use 4 for a sweeter bun)
Directions
Step #1 Prepare a heavy-duty stand mixer fitted with a kneader attachment.
Step #2 Place about 3-1/2 c flour in the bowl.
Step #3 Melt the shortening in the microwave; add to the bowl with the flour.
Step #4 In a measuring c, then add in 4 tbsps sugar & the salt; heat until quite warm in the microwave, measure out 1 c milk, stirring to dissolve the sugar & salt.
Step #5 Pour the milk into the bowl with the melted shortening & flour; cover the bowl with a towel to keep ingredients warm.
Step #6 Proof the yeast in a 3/4 c warm water with 1 tsp sugar for about 8-10 mins or until foamy.
Step #7 After proofing, add to the bowl & start kneading for about 3-4 mins, then add in more flour as needed to create a soft semi-sticky dough, knead about 8 more mins until smooth.
Step #8 Place the dough on a very lightly floured counter or board; let rest for 5-10 mins, covered with a clean tea towel.
Step #9 Grease a large bowl, then place the dough into bowl to rise in a warm place for about 50-60 mins (because of the amount of yeast, the dough should take a shorter rising time in a warm place).
Step #10 Punch down dough.
Step #11 Cut into pieces (I usually cut into 6 pieces), & shape large balls.
Step #12 Let dough balls rest for about 4 mins (or just enough time to make shaping easier).
Step #13 Shape the dough into desired length for buns.
Step #14 Sprinkle top a large cookie/baking sheet with cornmeal, or lightly grease with cooking spray.
Step #15 Place the long pieces of dough on a baking sheet (shape once again if you need to).
Step #16 Cover up & let rise for about 25 mins, or until doubled.
Step #17 Set oven to 375 degrees.
Step #18 Bake for about 22-25 mins, or until dark golden brown.
Step #19 If desired after the second rising & just before baking, beat one egg white with 1 tsp cold water, then brush on buns & sprinkle with sesame seeds.
