Orange Slices In Orange Mousse Recipe

Ingredients
  • 100 ml whipping cream .
  • 1 orange, rind of, julienned .
  • 2 egg yolks .
  • 2 tbsps water .
  • 2 tbsps citrus liqueur .
  • 100 ml sugar .
  • 1 tsp grated orange zest .
  • 1 tbsp sugar .
  • 2 tsps vanilla sugar .
  • 6 oranges .
  • Orange julienne

Directions
  • Step #1 Wash oranges with hot water, scrubbing well.
  • Step #2 Grate 1 ts of zest from one orange; cut the peel of another orange into fine julienne strips.
  • Step #3 Cook the orange julienne: measure sugar, water & orange strips into a saucepan & let simmer until liquid has evaporated.
  • Step #4 Arrange orange strips on baking parchment in swirls & allow this to cool.
  • Step #5 Juice one orange (you should get about 100 ml of juice).
  • Step #6 Peel & slice the remaining five oranges & also remove all the white pith & membranes surrounding the slices.
  • Step #7 Now make the orange sauce: place egg yolks, orange juice, grated zest & sugar on top of a double boiler.
  • Step #8 Heat carefully & whip until the mixture is thick & pale yellow, & tiny bubbles form.
  • Step #9 Remove from heat.
  • Step #10 Add liqueur & vanilla sugar & keep whisking until the mixture has cooled down.
  • Step #11 Keep sauce in the fridge until ready to serve.
  • Step #12 Just before serving, whip whipping cream until stiff peaks form.
  • Step #13 Fold whipped cream into orange sauce.
  • Step #14 Divide orange slices between dessert bowls & spoon orange mousse on top.
  • Step #15 Garnish with orange julienne swirls.
