Chocolate Mousse Pie Recipe

Ingredients
  • 1 1/2 tsps vanilla extract .
  • 1/4 c boiling water .
  • 2/3 c sugar .
  • fine dry breadcrumbs .
  • 1 c heavy cream .
  • 8 eggs, separated .
  • 8 oz semisweet chocolate .
  • 1 tbsp instant coffee .
  • 1 tsp vanilla .
  • 1/8 tsp salt .
  • 1/3 c sieved confectioners' sugar

Directions
  • Step #1 Preheat oven to 350 degrees.
  • Step #2 Place chocolate in top of a double boiler over hot water.
  • Step #3 Dissolve coffee in boiling water & add to chocolate.
  • Step #4 Cover up & let this stand over very low heat, stirring ocasionally.
  • Step #5 When almost melted, remove this from heat & beat smooth.
  • Step #6 Meanwhile, beat egg yolks until thick.
  • Step #7 Gradually beat in sugar until thick & lemony colored.
  • Step #8 Gradually beat chocolate into yolk mixture.
  • Step #9 Beat in 1 tsps vanilla.
  • Step #10 Beat egg white & salt until stiff, but not dry.
  • Step #11 Stir 1/4 of whites in chocolate mixture.
  • Step #12 Fold in rest of white carefully until mixed.
  • Step #13 Dust well-buttered 9" pie pan with bread crumbs.
  • Step #14 Fill pan up to rim with part of mixture & level.
  • Step #15 Bake 25 mins.
  • Step #16 Turn off oven & leave in for 5 mins.
  • Step #17 Remove from oven & cool on wire rack.
  • Step #18 Mousse will sink to form pie shell.
  • Step #19 When completely cool, fill with remaining mousse that has been put in the fridged.
  • Step #20 Beat heavy cream with confectioner's sugar & 1 1/2 tsps vanilla, & decorate pie.
  • Step #21 Chill & serve.
