Mohamed's Mean Lamb Cutlets Recipe

Ingredients
  • 3 garlic cloves, sliced .
  • 1 bunch flat leaf parsley (fold this up & tie with a parsley stem or if you have to use kitchen string or kitchen twine) .
  • 1/4 tsp ground ginger .
  • 2 tbsps cooking oil, divided .
  • 1/4 tsp cooking salt, to season meat .
  • 2 shoulder lamb chops, - 1 inch thick .
  • 2 tsps fresh ground black pepper .
  • 3/4 tsp cooking salt .
  • 1 tsp paprika .
  • 2 c water, approx .
  • 1/2 tsp fresh ground black pepper, to season meat .
  • 2 fresh tomatoes .
  • 1 bunch fresh coriander, fold this up & tie .
  • 2 c sweet white onions, sliced. Approx. 2 c

Directions
  • Step #1 Brown the seasoned chops in 1 tbsps of the oil in a skillet.
  • Step #2 Set aside.
  • Step #3 Saute onions, garlic, in a stewing or large pot in the other 1 tbsps of oil until onions are transluscent.
  • Step #4 Add the cooking salt, pepper, ginger & paprika.
  • Step #5 Saute with the onions & garlic for 1 min.
  • Step #6 Add the chops to the pot along with the water & drop in the parsley & coriander parcels.
  • Step #7 Add tomato (grated as we do here or sliced) & stir being careful not to dislodge the herb packets.
  • Step #8 Bring to the boil.
  • Step #9 Cover up & let simmer on low heat 30 mins.
  • Step #10 Uncover & let simmer on medium low heat another 15 mins.
  • Step #11 Place the chops onto a platter & cover with the brothy sauce.
  • Step #12 Serve with bread, salad & a cold drink.
  • Step #13 Follow with a pot of mint tea.
