Individual Mini Cheesecake Cups Recipe

Ingredients
  • Crust .
  • 1 (18 oz) box duncun hines moist deluxe yellow cake mix or devil's food cake mix .
  • 1 (21 oz) can cherry pie filling .
  • 1 tsp vanilla extract .
  • 1 1/4 c sour cream .
  • Cheese filling .
  • 1/2 c butter, melted .
  • Topping .
  • 2 (8 oz) packages cream cheese, softened .
  • 3/4 c sugar .
  • 1/4 c sugar .
  • 3 eggs

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Place 2 1/2 inch paper or foil wrap liners in 24 muffin c.
  • Step #3 For crust, mix dry cake mix & melted butter in large bowl.
  • Step #4 Beat at a lowish speed with an electric mixer for one min (mixture will be crumbly).
  • Step #5 Divide mixture evenly in muffin c (level but do not press).
  • Step #6 For filling, mix cream cheese, eggs, 3/4 c sugar & vanilla extract in a medium bowl.
  • Step #7 Beat at medium speed with an electric mixer until smooth.
  • Step #8 spoon evenly into muffin c.
  • Step #9 Bake at 350 for 20 mins or until mixture is set.
  • Step #10 For topping, mix sour cream & 1/4 c sugar in a small bowl.
  • Step #11 Spoon evenly over cheesecakes.
  • Step #12 Return to oven for 5 mins.
  • Step #13 Let cool for 15 mins.
  • Step #14 Garnish each cheesecake with cherry pie filling.
  • Step #15 Refrigerate until ready to serve.
