Griddled Eggplants And Peppers With Feta, Mint And Chilli Recipe

Ingredients
  • 4 tbsps olive oil .
  • 2 lemons, juice of .
  • 2 large eggplants, cut thinly lengthwise into about 10 slices each .
  • 4 large red peppers .
  • 2 large red chilies, finely sliced & deseeded .
  • 450 g feta cheese .
  • fresh black pepper, to taste .
  • 1 c fresh mint, finely sliced

Directions
  • Step #1 Preheat the grill as hot as possible & sit the whole peppers on the rack below until their skin turns red & blisters.
  • Step #2 You will need to rotate them to get them black all over.
  • Step #3 Take out & over with cling film for a few mins until the skin peels off easily.
  • Step #4 Uncover & peel the peppers & take out their stalks & cores.
  • Step #5 Cut into 4 pieces lengthways & set aside.
  • Step #6 Preheat a griddle, brush both sides of the eggplant slices with oil & grill for 2 mins until golden & tender.
  • Step #7 You may also char the red peppers if you like.
  • Step #8 Crumble the feta into a bowl & mix with mint chilli, black pepper & lemon juice, mint, leaving a bit of the mint aside for a garnish.
  • Step #9 Put some of the feta mixture on to the end third of each pepper & eggplant slice & roll.
  • Step #10 Place joint side down on a plate & sprinkle with a bit of mint.
