Chicken And Black Bean Chili Recipe

Ingredients
  • 1 medium yellow bell pepper, sliced
  • 1 tsp green pepper sauce (e.g., Tabasco®)
  • 1 (15 oz) can kidney beans, undrained
  • 2 tbsps cooking oil
  • ground black pepper to taste
  • sea salt to taste
  • 1 small yellow onion, sliced
  • 1 (6 oz) can roasted garlic tomato paste
  • 1 bunch fresh cilantro, sliced
  • 1 (15 oz) can black beans, undrained
  • 1 (11 oz) can whole kernel corn, drained
  • 1/2 tsp ground cayenne pepper
  • 1 medium green bell pepper, sliced
  • 1 tbsp chili powder, or to taste
  • 5 c water
  • 3 large skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 1/2 tbsp ground cumin, or to taste
  • 1 dried chipotle chili pepper, ground into powder

Directions
  • Step #1 Heat the oil in a large pot over med-heat/flame.
  • Step #2 Place chicken in the pot; brown on all sides.
  • Step #3 Spice up with sea salt, black pepper, chili powder, cumin, ground chipotle, & cayenne pepper.
  • Step #4 Mix in onion, green bell pepper, & yellow bell pepper.
  • Step #5 Pour in about 3 c water, & continue cooking 10 mins, until about 1/2 the water has evaporated.
  • Step #6 Mix the kidney beans, black beans, & corn into the pot.
  • Step #7 Spice up with green pepper sauce.
  • Step #8 Reduce heat to low, & mix in remaining 2 c water & tomato paste.
  • Step #9 Simmer, stirring every once in awhile 30 mins, or until thickened.
  • Step #10 Top with cilantro to serve.
