Healthy Apple Walnut Muffins With Flaxseed Recipe

Ingredients
  • 1/2 c sliced walnuts (more if you want) .
  • 3/4 c soy milk or milk .
  • 3/4 c all-purpose flour .
  • 1/4 c sugar (Less for healthier muffins) .
  • 2 tsps baking powder .
  • 1 c whole wheat flour .
  • 2 tbsps canola oil .
  • 1/2 c flax seeds .
  • 1/4 tsp morton lite salt (optional) .
  • 1 large apple, sliced (more if you want) .
  • 1 tsp cinnamon .
  • 3 egg whites

Directions
  • Step #1 Pre-heat oven to 400F degrees.
  • Step #2 Grind the flaxseed to a course powder, using a mixer or coffee grinder.
  • Step #3 In a bowl, cinnamon, sift together both flours, salt, sugar, & baking powder.
  • Step #4 Stir in flaxseed powder.
  • Step #5 Set aside.
  • Step #6 In a seperate bowl, beat together the egg whites with the oil & milk.
  • Step #7 Add the liquid ingredients to the dry ingredients & stir.
  • Step #8 Then stir apples & walnuts into the batter.
  • Step #9 Fill oiled muffin tin 2/3 full & bake 20-25 mins.
