Pantry Comfort Casserole Recipe

Ingredients
  • 2 slices white American cheese (Kraft Singles) .
  • 1/4 tsp lemon pepper (optional) .
  • 1 (12 oz) can canned peas, drained .
  • 3 tbsps flour .
  • 1/2 tsp garlic salt .
  • 1/3 c parmesan cheese .
  • water .
  • 1/2 c breadcrumbs, mixed with .
  • paprika .
  • 1 (12 oz) can canned corn niblets, drained .
  • olive oil or vegetable oil .
  • 1/4 tsp mustard .
  • 4 tbsps butter .
  • 8 oz pasta (ziti, penne, macaroni , shells or spiral) .
  • 1/2 c shredded cheese, mix divided

Directions
  • Step #1 In a large pot, bring water & a little olive oil to boil.
  • Step #2 Add Pasta, cook this until pasta is tender.
  • Step #3 Drain & reserve 1/2-3/4 c liquid.
  • Step #4 Combine pasta with drained corn & peas.
  • Step #5 Set Aside.
  • Step #6 over low heat/flame in a small saucepan, melt butter, slowly whisking in flour.
  • Step #7 Add cheese & stir til melted.
  • Step #8 Add Spice upings (except Paprika).
  • Step #9 Slowly stir in the reserved water from pasta til a cream like consistancy is reached.
  • Step #10 remove this from heat.
  • Step #11 Toss with pasta/ veggie mixture.
  • Step #12 Let cool about 5 mins, then toss with 1/4 c shredded cheese.
  • Step #13 Pour into a 9"x13" casserole or glass baking dish.
  • Step #14 sprinkle remaining cheese over, followed by breadcrumb/ parmesan mixture, & a little paprika.
  • Step #15 Bake covered for 18 mins.
  • Step #16 Uncover & let bake another 5 mins.
