Country Corn Casserole Recipe

Ingredients
  • 1/4 c water
  • 1 1/3 c crushed saltines
  • 1/2 c sliced onion
  • 1 (10.75 oz) can condensed cheddar cheese soup, undiluted
  • 1/4 c milk
  • 2 tbsps butter or margarine, divided
  • 1 (16 oz) package frozen corn, broccoli & red pepper

Directions
  • Step #1 In a saucepan over med-heat/flame, bring vegetables & water to a boil.
  • Step #2 Reduce heat; cover & let simmer for 5-6 mins or until tender; drain.
  • Step #3 In a saucepan over med-heat/flame, saute the onion in 1 tbsp butter until tender.
  • Step #4 Add soup & milk; stir until smooth.
  • Step #5 Add cracker crumbs & cooked vegetables; mix well.
  • Step #6 Spoon into a greased 8-in.
  • Step #7 square baking dish.
  • Step #8 Dot with remaining butter.
  • Step #9 Bake, uncovered, at 350 degrees F for 25-30 mins or until golden.
