Ingredients
1/2 c sliced fresh basil
1 c sliced green onions
3 tbsps margarine
1 c sliced spinach
1 tsp white sugar
ground black pepper to taste
1 c heavy whipping cream
salt to taste
5 c chicken broth
2 tbsps margarine, softened
2 tbsps all-purpose flour
1/2 c sliced parsley
Directions
Step #1 Melt 3 tbsps butter or margarine in a large saucepan.
Step #2 Saute onions until tender, about 10 mins.
Step #3 Add spinach, basil or watercress, & parsley.
Step #4 Cover, & let simmer 10 mins.
Step #5 Stir in broth & sugar.
Step #6 Simmer, covered, for 30 mins.
Step #7 Turn heat to low.
Step #8 Slowly stir in the cream.
Step #9 In a separate pan, mix together 2 tbsps butter or margarine & flour.
Step #10 Whisk in a little of the hot soup, beating until smooth.
Step #11 Pour mixture slowly into soup, stirring constantly.
Step #12 Bring just to a boil, & remove this from heat.
Step #13 Spice up with salt & pepper.
