Cream Of Herb Soup Recipe

Ingredients
  • 1/2 c sliced fresh basil
  • 1 c sliced green onions
  • 3 tbsps margarine
  • 1 c sliced spinach
  • 1 tsp white sugar
  • ground black pepper to taste
  • 1 c heavy whipping cream
  • salt to taste
  • 5 c chicken broth
  • 2 tbsps margarine, softened
  • 2 tbsps all-purpose flour
  • 1/2 c sliced parsley

Directions
  • Step #1 Melt 3 tbsps butter or margarine in a large saucepan.
  • Step #2 Saute onions until tender, about 10 mins.
  • Step #3 Add spinach, basil or watercress, & parsley.
  • Step #4 Cover, & let simmer 10 mins.
  • Step #5 Stir in broth & sugar.
  • Step #6 Simmer, covered, for 30 mins.
  • Step #7 Turn heat to low.
  • Step #8 Slowly stir in the cream.
  • Step #9 In a separate pan, mix together 2 tbsps butter or margarine & flour.
  • Step #10 Whisk in a little of the hot soup, beating until smooth.
  • Step #11 Pour mixture slowly into soup, stirring constantly.
  • Step #12 Bring just to a boil, & remove this from heat.
  • Step #13 Spice up with salt & pepper.
