Chocolate - Mocha Frosted Brownies Recipe

Ingredients
  • 2 tbsps hot espresso or very strong coffee .
  • 2 tbsps light corn syrup .
  • 3 eggs .
  • 4 oz chocolate chips (40-50% cocoa) .
  • Frosting .
  • 3/4 c butter .
  • 1 tsp vanilla extract .
  • 1 tsp baking powder .
  • 1/3 c butter .
  • 8 oz sweet dark chocolate or dark semi-sweet chocolate .
  • 5 oz sliced walnuts or pecan nuts .
  • 3 fluid oz boiling water .
  • 1 1/3 c all-purpose flour .
  • 4 tbsps unsweetened cocoa powder .
  • 1 3/4 c sugar

Directions
  • Step #1 Preheat oven to 350 deg F.
  • Step #2 Line a 13 x 9 cake pan with parchment paper & grease.
  • Step #3 Melt butter in a saucepan.
  • Step #4 In a large mixing bowl, mix flour, cocoa powder, sugar, baking powder & vanilla extract.
  • Step #5 Add eggs, melted butter & hot water & mix until smooth.
  • Step #6 Add chocolate chips & nuts.
  • Step #7 Bake at 350 degrees for about 20-30 mins or until a wooden pick inserted in center comes out clean.
  • Step #8 While cake is baking make the frosting.
  • Step #9 Mix butter, sliced chocolate, syrup & coffee & heat in a double boiler until melted.
  • Step #10 Stir until smooth.
  • Step #11 Cool cake & then frost.
