Blueberry- Peach Compote Recipe

Ingredients
  • 2 c fresh blueberries .
  • 1/2 c water .
  • 2 peaches .
  • 1 c dried blueberries .
  • 1/2 c sugar

Directions
  • Step #1 In a heavy-bottomed saucepan, mix the sugar & water & bring to a boil over medium-high heat.
  • Step #2 Add the fresh & dried blueberries & stir this to mix.
  • Step #3 Turn the heat down to low & let simmer for 20 mins, stirring once or twice.
  • Step #4 remove this from the heat & set aside.
  • Step #5 Meanwhile, bring a small pot of water to a rolling boil & lower in the peaches.
  • Step #6 Cook for several mins, just until the skins split.
  • Step #7 Remove & as soon as possible plunge them into an ice-water bath.
  • Step #8 peel the peaches, working over a dish to retain the juices, and, remove the pits, cut the peaches into small chunks.
  • Step #9 Fold the peaches & juice into the blueberry mixture.
  • Step #10 Serve warm with pancakes.
  • Step #11 Tip: Add a little finely grated lemon zest to your pancake batter.
