Pwdin Mynwy (monmouth Pudding) Recipe

Ingredients
  • 2 tbsps sugar .
  • 6 oz breadcrumbs (12 tbsp.) .
  • 4 pints milk .
  • 2 tbsps butter .
  • 1 lemon .
  • 3 egg yolks .
  • 5 tbsps raspberry jam

Directions
  • Step #1 Grate the rind of the lemon.
  • Step #2 Add the lemon rind, sugar & butter to the milk & bring to the boil.
  • Step #3 Pour over the breadcrumbs & leave to stand for 15 mins.
  • Step #4 Separate the egg whites & yolks.
  • Step #5 Stir the yolks into the cool bread mixture.
  • Step #6 Melt the jam.
  • Step #7 Pour half of the pudding mixture into a greased ovenproof dish.
  • Step #8 Spread with half the jam.
  • Step #9 Add the remainder of the pudding mixture & then the rest of the jam.
  • Step #10 Bake in a warm oven (325/F.
  • Step #11 or Mark 3) for 40-45 mins,.
