Gratin Of Summer Fruits With Irish Mist Sabayon Recipe

Ingredients
  • 1/4 c superfine sugar .
  • 1 c fresh blackberries or fresh blueberries or frozen blackberries or frozen blueberries .
  • mint sprigs (to garnish) (optional) .
  • 4 egg yolks .
  • Sabayon .
  • 3/4 c fresh raspberries or frozen raspberries .
  • Gratin .
  • 3/4 c dry white wine .
  • 3 tbsps Irish Mist liqueur .
  • 1 c fresh strawberries, hulled & sliced .
  • 1 tbsp confectioners' sugar .
  • 2 tsps fresh lemon juice

Directions
  • Step #1 Sabayon: In a double boiler, mix all ingredients for sabayon.
  • Step #2 Place over simmering, water & whisk for 8-10 mins, not boiling, or until thick, pale & creamy.
  • Step #3 Gratin: Preheat broiler (if not using blowtorch).
  • Step #4 Divide the fruit among 6 8-oz ovenproof bowls.
  • Step #5 Spoon sabayon evenly over tops & brown lightly under the broiler 4 inches from heat source for about 2 mins.
  • Step #6 Or, use a kitchen blowtorch & move flame constantly over the surface until the top is lightly browned.
  • Step #7 Dust with confectioners' sugar & garnish with mint if desired.
