Ingredients
1/4 c fresh parsley, sliced .
1 1/2 tbsps olive oil .
2 lbs medium raw shrimp (about 40 to 50) .
2 c tomato sauce (fresh or canned) .
1/4 tsp cayenne pepper .
1 c feta, crumbled .
fresh ground pepper .
1/2 c onions, sliced .
1 garlic clove, sliced .
salt .
1/4 c dry white wine
Directions
Step #1 Preheat oven to 450°F.
Step #2 In a skillet, over med-heat/flame, cook the onion in the olive oil until soft & golden.
Step #3 Add the garlic, tomato sauce, half the parsely, wine, salt & pepper to taste & the cayenne.
Step #4 Cook at a simmer, for 15 mins, uncovered, stirring frequently (the sauce should be rather thick).
Step #5 Meanwhile, peel & devein shrimp.
Step #6 Put shrimp, sauce & cheese in a shallow baking dish, cover & bake in the oven for 8 to 10 mins.
Step #7 Sprinkle top with remaining parsley & serve hot.
