Garides (shrimp) A La Turkolimano Recipe

Ingredients
  • 1/4 c fresh parsley, sliced .
  • 1 1/2 tbsps olive oil .
  • 2 lbs medium raw shrimp (about 40 to 50) .
  • 2 c tomato sauce (fresh or canned) .
  • 1/4 tsp cayenne pepper .
  • 1 c feta, crumbled .
  • fresh ground pepper .
  • 1/2 c onions, sliced .
  • 1 garlic clove, sliced .
  • salt .
  • 1/4 c dry white wine

Directions
  • Step #1 Preheat oven to 450°F.
  • Step #2 In a skillet, over med-heat/flame, cook the onion in the olive oil until soft & golden.
  • Step #3 Add the garlic, tomato sauce, half the parsely, wine, salt & pepper to taste & the cayenne.
  • Step #4 Cook at a simmer, for 15 mins, uncovered, stirring frequently (the sauce should be rather thick).
  • Step #5 Meanwhile, peel & devein shrimp.
  • Step #6 Put shrimp, sauce & cheese in a shallow baking dish, cover & bake in the oven for 8 to 10 mins.
  • Step #7 Sprinkle top with remaining parsley & serve hot.
