Panini With Sautéed Mushrooms And Gruyère Recipe

Ingredients
  • 1/4 c roasted red peppers, sliced .
  • 1 tbsp butter .
  • 8 slices whole wheat bread .
  • 1 (8 oz) package mushrooms, sliced .
  • 1/4 c sliced red onions .
  • 1 (5 oz) bag fresh spinach .
  • 4 tsps Dijon mustard .
  • 2 tbsps butter, melted .
  • 1 c shredded gruyere cheese

Directions
  • Step #1 Heat butter in large nonstick skillet over medium-high heat.
  • Step #2 Add mushrooms & sauté 5-6 mins.
  • Step #3 Spread mustard on 4 slices of bread; layer each with 6 spinach leaves, 1 tbsp red bell pepper, 1 tbsp onion, 1/4 c cheese, & 1/4 c mushrooms.
  • Step #4 Top with the remaining bread.
  • Step #5 Brush melted butter over both sides of each sandwich.
  • Step #6 If using a skillet, heat a large nonstick skillet over medium-high heat; place sandwiches in pan.
  • Step #7 Place another skillet on top of the sandwiches; cook 2-3 mins on each side until golden brown & cheese is melted.
  • Step #8 If using a panini maker, brush sandwiches with butter; place this in machine, close, & cook 2 mins or until done.
