Ingredients
1/4 c roasted red peppers, sliced .
1 tbsp butter .
8 slices whole wheat bread .
1 (8 oz) package mushrooms, sliced .
1/4 c sliced red onions .
1 (5 oz) bag fresh spinach .
4 tsps Dijon mustard .
2 tbsps butter, melted .
1 c shredded gruyere cheese
Directions
Step #1 Heat butter in large nonstick skillet over medium-high heat.
Step #2 Add mushrooms & sauté 5-6 mins.
Step #3 Spread mustard on 4 slices of bread; layer each with 6 spinach leaves, 1 tbsp red bell pepper, 1 tbsp onion, 1/4 c cheese, & 1/4 c mushrooms.
Step #4 Top with the remaining bread.
Step #5 Brush melted butter over both sides of each sandwich.
Step #6 If using a skillet, heat a large nonstick skillet over medium-high heat; place sandwiches in pan.
Step #7 Place another skillet on top of the sandwiches; cook 2-3 mins on each side until golden brown & cheese is melted.
Step #8 If using a panini maker, brush sandwiches with butter; place this in machine, close, & cook 2 mins or until done.
