1 1/2 c cornflake crumbs (the ready-made boxed kind) .
1 tsp garlic powder (use more if desired) .
2 tsps seasoning salt (use only seasoning salt) .
2 whole chickens, cut into pieces .
3/4 c coating mix (3/4 c is exactly one package of mix, use only Shake & Bake Southern Fried flavor coating mix for) .
black pepper
Directions
Step #1 Wash chicken pieces in cold water (leave the chicken moist so the coating will hold on to it) set aside.
Step #2 In the plastic mixing bag that comes with the coating mix, mix all ingredients (except the chicken pieces) & shake bag to mix thoroughly.
Step #3 Set oven to 425F degrees.
Step #4 Set oven rack to lowest-bottom position.
Step #5 Line a large 15-inch baking sheet with foil wrap, & spray with non-stick cooking spray.
Step #6 Shake each piece of chicken in the bag to coat thoroughly with mixture & place on the baking sheet.
Step #7 Repeat with the remaining chicken pieces.
Step #8 Bake for 45 mins (you might have to bake for about 5 mins more if the backs are attached to the legs).
Step #9 *NOTE* Sometimes if you are using frozen defrosted chicken there might still be some water left in the chicken that will come out when baking, if you find that there is a lot of water in your pan about halfway through baking, just carefully remove the pan with a towel or oven mitts & hold over the sink to drain the water, & place back in the oven to bake (just enough to drain, careful not to remove the chicken from the pan & throw into the sink!).
Step #10 The less water in the bottom of the pan the crispier you chicken will be).
