Chili Topped Taters Recipe

Ingredients
  • 2 tbsps chili powder
  • 2 lbs ground beef
  • 1 (15 oz) can tomato sauce
  • 6 large potatoes
  • salt & pepper to taste
  • 1/2 tsp garlic powder
  • 1 (16 oz) can pork & beans, undrained
  • 1 tbsp dried parsley flakes
  • 1 (16 oz) can kidney beans, rinsed & drained
  • 1 tsp dried oregano
  • 1 medium onion, sliced
  • 3/4 c shredded Cheddar cheese

Directions
  • Step #1 Scrub & pierce potatoes.
  • Step #2 Bake at 375* degrees Ffor 1 hr or until tender.
  • Step #3 Meanwhile, in a large saucepan, cook beef & onion over med-heat/flame until meat is no longer pink; drain.
  • Step #4 Add beans, tomato sauce & seasonings; mix well.
  • Step #5 Bring to a boil.
  • Step #6 Reduce heat; simmer, uncovered, for 30 mins.
  • Step #7 When potatoes are cool enough to handle, cut an X in the top of each with a sharp knife.
  • Step #8 Fluff pulp with a fork; top this with chili & cheese.
