Step #1 Place each chicken in heavy-duty resealable plastic bag.
Step #2 Add 1 1/4 c lemon juice to each.
Step #3 Seal bags; turn chickens to coat.
Step #4 Refrigerate at least 6 hrs & up to 1 day, turning bags every once in awhile.
Step #5 Preheat oven to 450°F Drain chickens; pat dry.
Step #6 Sprinkle top each with salt & pepper.
Step #7 Place chickens side by side, breast side down, on racks in large roasting pan.
Step #8 Roast 15 mins.
Step #9 Reduce oven temperature to 375°F Roast 45 mins.
Step #10 Turn chickens breast side up.
Step #11 Brush all over with honey.
Step #12 Continue to roast until cooked through & deep brown, basting with any juices in pan & brushing with honey every once in awhile, about 55 mins longer.
Step #13 Transfer chickens to platter.
Step #14 Tent loosely with foil wrap to keep warm & let this stand 15 mins.
Step #15 Meanwhile, pour pan juices into small saucepan.
