Chicken Parmigiana Recipe

Ingredients
  • 2 large egg whites, lightly beaten .
  • 1 1/2 c canned tomato sauce or pasta sauce .
  • 1/2 c dried breadcrumbs .
  • 1/2 c part-skim mozzarella cheese, shredded .
  • 1 tbsp italian seasoning, dried .
  • 1 lb boneless skinless chicken breasts, lbed thin .
  • 1 tbsp grated parmesan cheese .
  • 1 tsp olive oil

Directions
  • Step #1 Preheat oven to 350°F.
  • Step #2 Coat an 8-inch square pan with cooking spray.
  • Step #3 Dip chicken in egg whites & turn to coat.
  • Step #4 Then mix breadcrumbs with Italian seasoning & dip chicken in breadcrumb mixture, turn to coat thoroughly.
  • Step #5 Heat oil In a large-ish skillet; add chicken.
  • Step #6 Cook until lightly browned & no longer pink in the center, about 4 mins per side.
  • Step #7 Pour ½ c sauce into prepared baking dish.
  • Step #8 Place chicken in dish & pour remaining sauce over chicken.
  • Step #9 Sprinkle top with cheese & bake this until bubbly, about 25 mins.
