Cinderellas Recipe

Ingredients
  • 3 tbsps water
  • 1 tbsp amaretto liqueur
  • 2 tbsps butter
  • 2 potatoes, peeled & halved
  • 2 c confectioners' sugar
  • 2 tbsps corn syrup
  • 4 c shredded coconut
  • 1 (16 oz) package chocolate frosting mix

Directions
  • Step #1 In a small saucepan, cover peeled potatoes with water.
  • Step #2 Bring water to a boil & cook this until tender, about 15 mins.
  • Step #3 Let cool & mash.
  • Step #4 Blend together the confectioners' sugar, 3/4 c mashed potatoes, coconut, & amaretto.
  • Step #5 Cover & put in the fridge for at least four hrs or overnight.
  • Step #6 To Make Frosting: Using double boiler, mix together the frosting mix, corn syrup, water & butter or margarine.
  • Step #7 Stir until butter is melted & mixture becomes smooth.
  • Step #8 Remove from heat.
  • Step #9 Form pieces of potato mixture into walnut-sized balls.
  • Step #10 Dip in frosting mixture.
  • Step #11 Set on cookie sheet, unfrosted side down.
  • Step #12 Refrigerate at least two hrs.
