Ingredients
3 tbsps water
1 tbsp amaretto liqueur
2 tbsps butter
2 potatoes, peeled & halved
2 c confectioners' sugar
2 tbsps corn syrup
4 c shredded coconut
1 (16 oz) package chocolate frosting mix
Directions
Step #1 In a small saucepan, cover peeled potatoes with water.
Step #2 Bring water to a boil & cook this until tender, about 15 mins.
Step #3 Let cool & mash.
Step #4 Blend together the confectioners' sugar, 3/4 c mashed potatoes, coconut, & amaretto.
Step #5 Cover & put in the fridge for at least four hrs or overnight.
Step #6 To Make Frosting: Using double boiler, mix together the frosting mix, corn syrup, water & butter or margarine.
Step #7 Stir until butter is melted & mixture becomes smooth.
Step #8 Remove from heat.
Step #9 Form pieces of potato mixture into walnut-sized balls.
Step #10 Dip in frosting mixture.
Step #11 Set on cookie sheet, unfrosted side down.
Step #12 Refrigerate at least two hrs.
