1/2 lb bacon, cut in 1/2 inch pieces (I use a whole package) .
1 medium onion, medium dice (a larger one is ok) .
1/4 c vegetable oil (for vegan) .
2 (15 oz) cans black-eyed peas, with juice (1 qt if you cook your own peas) .
2 c uncooked rice .
3 c water .
2 tsps liquid smoke (for vegan)
Directions
Step #1 In a 4 qt or pan brown bacon & cook onion in bacon grease until the onion is transparent.
Step #2 ** For vegan, omit bacon & use approximately 1/4 c of vegetable oil to cook onion.
Step #3 Add uncooked rice, black eyed peas (with juice) & water to your bacon onion mixture.
Step #4 Mix well.
Step #5 **For vegan add liquid smoke at this point to replace the smoke flavor that would have been added by the bacon.
Step #6 Bring to a boil & then reduce heat to medium.
Step #7 When the tops of the bursting bubbles of boiling water are all of the liquid that can be seen above the rice, remove the pan from the heat & cover.
Step #8 Wait at least twenty mins, WITHOUT PEEKING!
Don't do it.
Step #9 You'll loose precious heat & steam.
Step #10 Serve with bread of your choice, or with the veggies of your choice & plenty of hot sauce.
Step #11 Of course, the variety of hot sauce you choose will depend on your tolerance for heat.
Step #12 If you would like, this could be served as a side dish, as well.
